Easy Lentil Soup

Here’s a lentil soup that hits the spot! And you can make in the instant pot! Just toss in a few ingredients and set it to cook for 7 minutes. And it makes a big pot so you can stretch it out for several meals or tuck some away in the freezer for a busy day.

Cook in an instant pot for 7 minutes:

1 pound lentils

8 cups water

1-2 potatoes, diced

1 cup baby carrots, chopped

7 cups greens, chopped

1 onion, chopped

After cooking, add the following:

28-ounce can of Hunt’s crushed tomatoes with basil

2-3 cloves garlic, minced

3 Tbsp McKay’s chicken-style seasoning

If you don’t have the McKay’s seasoning, you can use 2 Tbsp Better Than Bullion Seasoned Vegetable Base.
