Baked Apple-Cinnamon Oatmeal
This is my first foray into steel cut oats. Definitely a believer now! Toss the ingredients together the night before. Set your oven to “time bake” and wake up to the aroma of breakfast already made for you!
Why steel-cut oats? If the taste and texture don’t already win you over, how about the fact that they are really good for you? They are minimally processed and have a low glycemic value (meaning it’s easier on the blood sugar).
Be sure to use a dish that’s large enough, or it will boil over in your oven. I used a 1.5 quart dish and it bubbled over a little. Use a larger dish, and you should be fine. The ideal would be to have a 2-quart ceramic dish with a lid. Give it a quick spay with Pam and start adding ingredients!
Add to a 2-quart baking dish:
¾ cup steel cut oats
1 apple, chopped
½ cup chopped dates
1 tsp cinnamon
½ tsp salt
⅛ tsp cloves
Give the above a quick stir and add:
2 ¾ cups soy milk (or other plant milk)
Cover and bake at 375 for 1 hour.
