Black Bean Soup
Make a big pot of this and enjoy for several days. It’s been a family go-to dish and doesn’t fail to provide flavor-packed nutrition. The Instant Pot makes it quick and easy.
Soak a few hours or overnight:
1 pound black beans
Cook 45 minutes in Instant Pot:
Soaked black beans
3 stalks celery, chopped
3 potatoes, diced
1 onion, chopped
5 cups kale or beet greens, chopped
5 cups water
Add:
28-ounce can Hunts crushed tomatoes with basil
3 Tbsp McKays chicken style seasoning
(or 2 Tbsp Better Than Bullion seasoned vegetable base)
2 cloves garlic, minced
Note: If you don’t soak the beans, use 7 cups of water instead of 5 cups. Either way, be sure not to exceed the “fill limit” on the Instant Pot.
