Black Bean Salad

Great flavors blend together to make a cold healthy dish for a hot summer day!

Combine in a large bowl:

3 15-ounce cans black beans, rinsed and drained

1 pound bag frozen corn

3 bell peppers, chopped (red, yellow, orange)

6 green onions, chopped

2 cups (1 pint) grape tomatoes, halved

1 bunch cilantro, chopped

Combine separately and add to above:

Juice of 4 limes (about ½ cup)

¾ tsp salt

2 cloves fresh garlic, minced

Add just before serving and toss gently:

1 avocado, diced
