Tofu Sour Cream

Here’s a sour cream that creamy without all the saturated fat that lurks in traditional sour cream. You can whip this up in your blender in just a few minutes and enjoy the flavors without the regret. Also, keep scrolling to find a variation that makes a dill dressing.

Tofu Sour Cream

12 ounce box MoriNu soft tofu

½ cup raw cashews

1 Tbsp lemon juice

½ tsp salt

1 tsp onion powder

2 Tbsp fresh or dried chives (optional)

Blend all ingredients except the chives until smooth. Add the chives and blend very briefly. Note: Be sure you use the soft MoriNu tofu for this recipe. It will make the finished product smooth and tasty.

This recipe is adapted from Jim and Neva Brackett’s Seven Secrets Cookbook published in 2006 by the Review and Herald Publishing Association and shared with you by permission. The original recipe calls for 1 teaspoon of salt and gives a variation to make dill dressing (below).

Dill Dressing

Make the above recipe and add:

½ tsp dill weed

½ tsp Italian seasoning

1 tsp garlic powder

1 Tbsp honey or sugar

Additional salt to taste

Water to desired consistence
