Cornbread
How about cornbread recipe that doesn’t start with butter and eggs? Enjoy this cornbread with a steaming bowl of lentil soup!
Combine and set aside:
1 cup cornmeal
1 cup whole wheat flour
2 Tbsp ground flaxseed
1 ½ Tbsp baking powder
¾ tsp salt
Combine and add to above:
1 ¼ cups soymilk
¼ cup honey
¼ cup applesauce
Pour batter into a baking dish or iron skillet that has been sprayed with Pam. Bake at 400 until toothpick inserted in the middle comes out clean (about 20 minutes). Be careful not to overbake.
