Creamy Cucumber Dressing
Here’s a simple salad dressing made from all fresh ingredients and that’s not loaded down with processed oils and sodium. One tablespoon will only set you back 20 calories.
Blend until smooth:
1 small cucumber (peeling is optional)
½ onion (cut into chunks)
1 cup raw cashews (or slivered almonds)
¼ cup water
3 Tbsp lemon juice
½ tsp salt
Add if desired:
1 Tbsp honey
1 Tbsp dried parsley (add after blending)
