Easy-Peasy Cheesy Sauce

Inspired and created by a good friend, this sauce is a great topping for pizza or salad or as a filler for burritos or wraps. Whiz up a batch of it and keep it handy!

Blend thoroughly in a blender:

1 cup cooked brown rice

1 cup water

1/3 cup raw cashews

4 ounce jar pimentos

2 Tbsp lemon juice

2 Tbsp nutritional yeast flakes

1 Tbsp habanero pepper (optional)

2 tsp onion powder

1 tsp salt

¼ tsp garlic powder


Hint: You don’t have to cook rice just for this recipe. Just set some aside when you make a batch of rice. Freeze the extra rice in one-cup portions and it will always be ready when you need to make the cheesy sauce.

Another hint: Brown rice is super easy to make in the oven. No worries about boiling over. No babysitting a kettle on the stove. You can even use time bake to have it done right when you want it. Check out the rice recipe on this website.
