Broccoli Cheese Soup

Looking for an easy and satisfying meal? Here’s a soup recipe that packs in the veggies but skips the endless chopping! Get this on the table in not much more than 30 minutes.

Simmer until vegetables are soft:

3 cups water

1 pound bag baby carrots

3 potatoes, cut into large chunks

1 onion, cut into large chunks

1/3 cup raw cashews

 

Add to above and puree until smooth in a blender:

2 cloves garlic

1 ¼ tsp salt

 

Steam 3-4 minutes (covered) in the microwave and add to above:

4 cups chopped broccoli

¼ cup water

 

Makes 6 cups
