Blueberry muffins

No heavy fat and sugar here. These muffins will leave you wanting more!

Combine in a mixing bowl and set aside:
¾ cup unsweetened soy milk
½ cup unsweetened applesauce
1/3 cup honey
1 Tbsp orange juice concentrate
1 Tbsp lemon juice
 2 tsp vanilla


Combine and add to dry ingredients:
2 cups white whole wheat flour
1 Tbsp baking powder
¾ tsp salt


Fold in:
1 cup frozen blueberries


Stir as little as possible. Spoon into a muffin tin that has been sprayed with Pam. Bake at 350 for 20 minutes. Take care not to overbake. Hint: Store in air-tight bags in the freezer until ready to use so they will stay moist.

Makes 12 muffins
